Eggplant Fries

Just a quick post to recommend this recipe, at the bottom of their
web page, for eggplant fries. They are broiled, not deep fried, but are very crunchy (what did we do before panko?) and the eggplant went almost fluffy. We used this lovely Rosa Bianca fresh picked from the garden. They recommend serving them with honey, which was good, but next time we’ll make a tangy lemony garlicky aioli to try. We had some leftover breading and tried a few pattypan fries. I DO NOT recommend that you try that, unless you pre-cook it which we will try next time! :)
